The Lantern Vegan Family Cookbook

Yield: 5 servings
1 14-oz. can unsweetened coconut milk
1 Tbs. red curry paste
1 Tbs. sesame oil
1/4 cup soy sauce
1/4 cup water
1/4 cup peanut, almond, or soy butter
3 7-oz. packages fresh soba noodles
2 cups bite-sized brocoli pieces
1 2-oz. jar diced pimientos
Preheat oven to 350 degrees F.
1. Boil soba noodles for 3 minutes. Drain off water and set noodles aside.
2. In a large bowl, whisk together the coconut milk, red curry paste, sesame oil, soy sauce, water, and nut butter. Stir in the soba noodles, broccoli, and pimientos.
3. Transfer to a 9 x 13-inch baking dish.
4. Bake, covered, for 30 minutes.
5. Garnish with coconut and peanuts.
