Recipe - Potato Latkes

The Lantern Vegan Family Cookbook

Yield: 8 pancakes

3 cups shredded potatoes
1 small onion, diced
1/2 cup flour
1/4 cup light olive oil
1 Tbs. nutritional yeast flakes
1 tsp. baking powder
1 tsp. salt
1/8 tsp. black pepper

Preheat grill to 400 degrees F.

1. In large bowl, combine all ingredients.

2. Cook latkes like pancakes. Place 1/3 of a cup of mixture on hot grill and flatten.

3. Grill until browned on each side.
