The Lantern Vegan Family Cookbook

Yield: 2 cups
16 oz. firm tofu, drained and rinsed
2 celery ribs, minced
1/2 small white onion, minced
1/2 cup vegan mayonnaise
1 1/2 Tbsp. lemon juice
1 Tbsp. yellow mustard
3/4 tsp. salt
1/2 tsp. garlic
1/2 tsp. onion powder
1/8 tsp. ground black pepper
1. Place tofu in a large, dry, clean dish towel. Squeeze out excess water.
2. Place tofu in a large bowl and mix with remaining ingredients.
3. Place mixture in a food processor for a smoother texture if desired.
This spread is nice for dipping vegetables or crackers in, or use it as a sandwich spread.
