Recipe - Roasted Yam

The Lantern Vegan Family Cookbook

Yield: 4 servings

1 yam, peeled and julienne cut
1 Tbsp. light olive oil
1 Tbsp. red wine vinegar
1/2 tsp. sugar
1/2 tsp. garlic
1/2 tsp. oregano
1/2 tsp. basil
1/4 tsp. black pepper
salt to taste (about 1/2 tsp.)

Preheat over to 425 degrees.

1. In a small bowl, combine all ingredients, except salt.
2. Evenly arrange in a baking dish.
3. Bake, uncovered, for 25 minutes.
4. Add salt to taste.

You can substitute 1/4 cup pure maple syrup for the sugar.
